Sparkling white wine with ancestral re-fermentation in the bottle
Brightly coloured with amber and golden hues, it is a wine with an intense flavour due to the presence of balanced tannin; savoury and mineral with a fruity, rich and persistent bouquet. Vinification takes place in two stages: The white grapes are destemmed and the musts remain on the skins for about 20 days. During maceration in steel barrels, the first spontaneous fermentation and the extraction of colour, tannins and aromas take place. In spring, the wine is then bottled with the addition of sweet must to complete the bottle fermentation. The contact with the skins and the indigenous yeasts in the bottle guarantee a long-lived product with special characteristics that make it unique.
A wine suitable for the whole meal, versatile, that lends itself to multiple pairings. Perfect as an aperitif and in combination with savoury dishes.
