For us, it is a return to the ancient and healthy traditions, to appreciate scents and flavors long forgotten, to follow the lunar phases, and to respect the soil in order to obtain always the highest quality products without ever forcing the production.
But the respect for the environment, for the plants, and for ourselves as operators—who are the first to live and breathe our countryside—is translated here at Folicello into a further commitment: to make our farm a zero impact reality with a closed loop system.
The energy we use comes from the sun; rainwater is collected and used for fertigation, while the pomace is utilized as a natural soil conditioner. We tenderly maintain and restore hedges and small woods across our vineyard, offering a natural shelter to beneficial insects, nature’s own guardians against pests.
In doing so, we nourish not only the soil and its cherished produce, but also the very soul of the landscape, ensuring it remains vital and naturally varied.

Our choice of vine varieties is deliberate. Adaptability to the environment and resilience are paramount. Although they yield slightly less than varieties used in conventional agriculture, they do not require the same need for continuous, intensive treatments.
Our priority is to develop a production model that actively avoids the excessive exploitation of natural resources—especially soil, water, and air. Instead, we integrate these resources into a sustainable development model built to endure over time.
Organic farming is anything but hands-off. Rejecting synthetic chemicals—which often appear to solve every problem—requires the farmer to possess meticulous attention and extremely high professionalism.
