Rosé Lambrusco, sparkling wine with ancestral bottle fermentation

Il Rosato Folicello is a fragrant, savory, and harmonious wine, with balanced acidity that gives this sparkling wine, produced with ancestral bottle fermentation, a marked freshness accompanied by pleasant floral aromas. It is obtained from a blend of Lambrusco di Sorbara and Salamino grapes, hand-picked and vinified as a white wine. After soft pressing, the fermentation of the free-run must begins in stainless steel. This is followed by bottling with the correct residual sugar content to complete fermentation and foam formation in the bottle. Producing a bottle-fermented wine today means, for us, reviving the best of old Emilian traditions and, with the help of modern oenology, achieving a quality, aromatic, longer-lasting wine with unique organoleptic characteristics. The light sediment often found in this type of bottle is not a flaw but rather proof of the vitality of this product, capable of giving each bottle its own unique character.

Perfectly pairs with vegetarian or fish-based first courses, light main dishes, and cheeses. Also excellent as an aperitif.
