Folicello 3 is a partially fermented must; a fresh and fruity drink in which acidity and sweetness are perfectly balanced by a low alcohol content, which characterises and enhances the aromas.
Characterised by a special taste complexity resulting from a special fermentation of lactic bacteria and non-alcoholic yeasts naturally present on the grape skins, followed spontaneously by partial alcoholic fermentation.
Hints of wild berries, pomegranate and a sweet and sour flavour characteristic of blackcurrants and gooseberries prevail on the palate. The nose smells of fresh berries from the undergrowth.

Production method
We harvest the grapes whole, healthy, at the right point of ripeness to obtain a high quality product. The grapes are destemmed and maceration of the musts on the skins is initiated to extract colour, tannins and aromas. The must, obtained from the subsequent pressing, undergoes non-alcoholic fermentation thanks to the inoculation of a culture of bacteria and non-saccharomyces yeasts that give the product its characteristic aromatic complexity. Partial alcoholic fermentation continues spontaneously. All stages of production are defined to keep the freshness and nutritional values of our musts as unaltered as possible. No sulphites or products of animal origin are used. We therefore self-certify the product as Vegan.
Match
A low-alcohol alternative to wine, perfect in combination with savoury dishes throughout the meal, for aperitifs or as an accompaniment to dry pastries. It is suitable for daily consumption as it is or as a sparkling base for creating low-alcohol cocktails.
