Production method
We harvest whole, healthy grapes at their peak ripeness to ensure a high-quality product. The grapes are pressed using a nitrogen-saturated press, which protects the juice from oxidation and preserves its natural freshness. Following this, a specialized non-alcoholic fermentation is initiated through the inoculation of a selected culture of lactic acid bacteria and non-saccharomyces yeasts, which provide the product with its characteristic aromatic complexity. To achieve a fine and persistent perlage — reminiscent of a sparkling wine — carbon dioxide is added gradually. The product is then bottled and pasteurized to ensure longevity without the use of preservatives. Every stage of production is carefully defined to preserve the freshness and nutritional integrity of our musts as much as possible.
No sulfites or animal-derived products are used throughout the process; we therefore self-certify the product as Vegan.

Shelf life and serving temperature:
The product has a shelf life of 3 years from bottling date. Once opened, keep refrigerated and consume within 3–4 days to preserve its organoleptic characteristics.
