Folicello 0 is a pure, genuine, and inclusive product, as it is naturally alcohol-free. It is characterized by a unique taste complexity resulting from a special fermentation using lactic acid bacteria and non-alcoholic yeasts naturally present on grape skins. It features a fine and persistent perlage thanks to the gradual addition of carbon dioxide and is then bottled and pasteurized to ensure longevity without the use of preservatives. Folicello 0 is a refreshing and balanced beverage in which sweetness, acidity, and savoriness combine perfectly, making it unique and suitable for an adult palate. On the palate, notes of berries, pomegranate, and a sweet and sour flavor typical of blackcurrant and gooseberry prevail. On the nose, aromas of fresh forest fruits are enhanced by a fermentative note.

Production method
We harvest whole, healthy grapes at the right stage of ripeness to obtain a high-quality product. The grapes are destemmed and the must is left to macerate on the skins to extract color, tannins, and aromas. The must, obtained from subsequent pressing, undergoes a non-alcoholic fermentation thanks to the inoculation of a culture of non-Saccharomyces bacteria and yeasts, which give the product its characteristic aromatic complexity. Carbon dioxide is gradually added to obtain a fine and persistent perlage similar to a sparkling wine. The product is then bottled and pasteurized to ensure shelf life without the addition of chemical preservatives. All stages of production are designed to preserve as much as possible the freshness and nutritional values of our musts. No sulfites or animal-derived products are used. We therefore self-certify the product as Vegan.
Match
A non-alcoholic alternative to wine, perfect to pair throughout a meal, including with savory dishes, for aperitifs, or alongside dry pastries. Ideal for daily consumption on its own or as a sparkling base for creating non-alcoholic or low-alcohol cocktails. Shelf life and serving temperature: The product has a shelf life of 3 years from bottling. Once opened, store in the refrigerator and consume within 3–4 days. It is recommended to serve at a temperature of 10–12 °C.
